Kid Tested, Mom Approved: Fruit Pizza Recipe

Now that I’ve shared a couple of main dishes for the smoker with you (see the June issue of Simply Family here or check out my most recent brisket recipe here), it’s time to think about a refreshing summer dessert to go with your bacon-wrapped scallops or brisket. One of my family’s all time favorite summer desserts is fruit pizza. It’s so refreshing on a hot day! Plus, it is easy for the kids to participate in making because they can easily help spread the fruit toppings. Double bonus: the kids love it so much they inhale fruit like you’ve never seen and you feel a little bit like you are #winning.

Fruit pizzas are made in a variety of ways. I use a pastry crust while some use a cookie crust. What you use for your crust depends on your taste - the cookie crust is too sweet for me and I like to enjoy the natural sugar of the fruit. For the fruit toppings, you can really use any variety of fruit although don’t use any that are overly juicy (e.g. watermelon) because they might make the crust soggy. As you will see, I especially like to fill our fruit pizza up with a good variety of berries and lots of colors!

Fruit Pizza

Ingredients:

  • Pastry Crust
  • 16 oz Cream Cheese
  • 1cup Powdered Sugar
  • 1 tablespoon Milk
  • Fruits of your choosing

Crust:

Any pastry crust will do for this - even the Pillsbury crescent rolls work as a good pastry crust for fruit pizza! 

  1. Choose pastry crust (homemade or store bought)
  2. Bake the crust according to instructions
  3. Let cool

Toppings:

  1. Allow 16 oz. cream cheese to soften
  2. Mix together cream cheese, 1 cup powdered sugar, 1 tablespoon milk
  3. Spread evenly on cooled pastry crust
  4. Top with a variety of fruits including kiwi slices, mandarin oranges (I prefer canned for this), raspberries, blackberries, strawberries (sliced in halves), and blueberries (Note: this is my favorite combination—we have also added pitted fresh cherries, halved grapes, mango, and pineapple which are all pretty good too)
