Falling for Fresh Salads: Apple Bacon Salad
November is all about Thanksgiving and the beautiful fall harvest of vegetables. Salads are a perfect way to utilize all of the leftovers and delicious vegetables to create a healthy meal. Spice up your salad plate with fresh fall additions and revamped recipes. The apple, bacon salad is a delicious way to shake up a leftover chicken breast and enjoy a special lunch. Apples are also a key ingredient and are plentiful and delicious this time of year. The sweetness and juiciness of the apple pairs deliciously with the salty flavors of bacon and blue cheese, making this salad anything but ordinary.
Ingredients:
- 1 apple, sliced thinly
- 2 slices of bacon, crumbled
- Blue Cheese Sprinkles
- 1 chicken breast, cut into cubes
- Spinach
- Balsamic Vinaigrette Dressing
Simply Amanda's Tip Worth Trying:
To cook bacon like a pro – line a shallow baking pan with parchment paper. Arrange bacon in a single layer and cook at 250 degrees for 1 ½ hours. Turn after 45 minutes. A convection oven is best but a regular oven will work well also. This bacon will be well worth the wait. The bacon melds together while being cooked low and slow. There are no grizzled parts – it is all delicious (and easy to clean up). Be sure and bake plenty.
