Recipe: Honey Pumpkin Seed Clusters
So you’ve been to the pumpkin patch, you’ve given each pumpkin its own personality, now it’s time to head off the beaten path and do something different with those pumpkin seeds. You could go old school, but if you’ve been looking for a way to jazz up those pumpkin seeds, then these Honey Pumpkin Seed Clusters are just what the chef ordered! These clusters will elevate a breakfast of Greek yogurt, a salad, and even a snack. They are delicious, nutritious and simple to prepare. Use your own roasted pumpkin seeds or buy them roasted, either way this recipe is a winner!
Honey Pumpkin Seed Clusters Recipe:
*Makes about 45 clusters
- 1 cup roasted pumpkin seeds
- 2 tsps vanilla
- 1 Tbls plus 1 tsp honey
- 1 Tbls plus 1 tsp coconut sugar (or brown sugar)
- A splash of boiling water
Directions:
Preheat the oven to 300 degrees. In a mixing bowl, combine the vanilla, honey, and sugar. Add a small amount of boiling water
until the mixture is the consistency of syrup. Add the pumpkin seeds and stir well to coat them evenly.
Cover a baking sheet with parchment paper. Drop the nut mixture into small clusters. Bake for 10 minutes.
After the clusters have cooled slightly, gently press them together to form more of a tight ball. Allow to cool completely.
The clusters may be kept in a sealed container at room temperature.
To create this divine yogurt, add the pumpkin seed clusters to plain Greek yogurt. Top with a swirl of honey and a handful of dried cranberries.
