Recipe: BBQ Chicken Quinoa Salad
As September falls into October and families have become fully immersed in their back to school busy-ness, we give you September's final 'Cook This' feature in a delectable BBQ Chicken Quinoa Salad. Quinoa is the perfect canvas for a salad. The whole grain food is high in anti-oxidants, fiber, and protein. In a salad, it takes on the flavors of the ingredients and can be used in savory and sweet dishes. This recipe is delicious for lunch or for light dinner and stores nicely for about three days.
Ingredients:
- 3 cups cooked quinoa
- 1 cup corn
- 14 oz can of black beans, rinsed and drained
- 2 cups shredded BBQ chicken
- ¼ cup White Cheddar cheese, shredded
- 2 scallions, chopped
- Cilantro for garnish
Instructions
In a large bowl, toss together the quinoa, corn, black beans, chicken and avocado. Season with salt and pepper. Transfer mixture onto a bowl and top with shredded cheese, scallions and cilantro. Serve warm or at room temperature.
