Crockpot Recipes: Italian Roast Beef
There is nothing more satisfying on a cold day than to walk into a warm home saturated with the smell of a hearty meal simmering in the crockpot. Throughout October (and in the pages of Simply Family Magazine) we’ve been sharing a variety of Crockpot Recipes for you to add to your family’s fall menu. So far we've shared recipes for Creamy Tomato and Chicken Soup and Short Ribs, and now it's time for our third and final installment in this crockpot recipe series: Italian Roast Beef. These meals may be prepared ahead of time and frozen until ready to cook. Simply add all ingredients, except those marked *, into a Ziploc Freezer Bag and double bag before freezing. Allow plenty of time to thaw the meal in the refrigerator before placing it into the crockpot to cook. Add the ingredients marked with *. Sit back and let the crockpot make dinner for you and your family!
Italian Roast Beef
With its mild bite, the pepperoncini peppers add a unique twist to traditional roast beef. It is delicious served on a toasted deli roll with melted cheese or served over rice with a side of vegetables.

Ingredients:
- 1 whole Beef Chuck Roast, 2.5 To 4 Pounds
- 1 can Beef Consomme Or Beef Broth*
- 3 Tablespoons (heaping) Italian Seasoning
- 1 teaspoon Salt
- 1/4 cup Water*
- 1/2 jar (16 Oz) Pepperoncini Peppers, With Juice
Directions:
Combine all ingredients in the crockpot and cook on low for 6 to 8 hours or until meat is fork-tender and falling apart. Remove from crockpot. With two forks, completely shred all meat, leaving no large chunks behind.
