Crockpot Recipes: Creamy Tomato and Chicken Soup

There is nothing more satisfying on a cold day than to walk into a warm home saturated with the smell of a hearty soup simmering in the crockpot. Throughout October (and in the pages of Simply Family Magazine) we'll be sharing a variety of Crockpot Recipes for you to add to your family's fall menu, starting with this mouth-watering Creamy Tomato and Chicken Soup. The meals may be prepared ahead of time and frozen until ready to cook.  Simply add all ingredients, except those marked *, into a Ziploc Freezer Bag and double bag before freezing.  Allow plenty of time to thaw the meal in the refrigerator before placing it into the crockpot to cook.  Add the ingredients marked with *.  Sit back and let the crockpot make dinner for you and your family!

Creamy Tomato and Chicken Soup

This delicious recipe is a favorite because of its extreme ease and versatility.  Serve the dish as a soup, over pasta, or with spinach and kale for a healthy meal.

Ingredients:

  • 2.5 lbs chicken breasts or thighs
  • 14 oz can of coconut  milk (light or full fat)*
  • 14 oz Italian style diced tomatoes
  • 6 oz can tomato paste
  • 15 oz can tomato sauce
  • 1 cup chicken broth*
  • 2 garlic cloves, crushed
  • 1 Tablespoon Italian seasoning
  • Salt and Pepper to taste

Directions: Combine in crockpot and cook on low temperature for 4 hours or until the chicken shreds easily.
