Chocolate Caramel S'mores ....

I love to bake, and I love to eat.  My boys (and I) have an insatiable  sweet-tooth....Not to mention that we have a Saudi Arabian college student living with us, who survived on dorm food for his first semester in Billings. .For the first few days that he lived with us, he would leave to get food....until he figured out that I bake and I cook all the time!  Now he is a frequent resident of my dining room table, and someone else that I trip over while I am fixing dinner!  It's so rewarding for me to cook for people who LOVE to eat!  When I pulled these little gems out of the oven this morning, he was snatching them up before they had a chance to cool....♥

Chocolate Caramel S'mores

1 pouch Betty Crocker Chocolate Chip Cookie Mix  (1 lb 5 oz)

1 Egg

1/2 cup Butter (softened)

24 Chocolate Caramel Candies (AKA Rolos)

72 (3/4 c) Mini Marshmallows

3/4 cup Chocolate Chips

Preheat Oven to 350 degrees (how do you make a degree sign on a computer?  Guess that should be on my list of things to find out.)  Grease a mini muffin tin and set aside.

1.  Combine, Egg, Cookie Mix, and Butter and mix until combined.

2.  Roll into 1-inch balls and place into muffin tin. Bake for 13-15 minutes, or until sides are lightly browned.

3.  Push a Rolo into the middle of each cookie, and then top with 3 or 4 mini marshmallows.  Put the cookies back into the oven for 2-4 minutes or until marshmallows are puffed up.

4.  Place the chocolate chips into a zip-top bag and microwave for one minute to melt.  Snip a corner off of the bag and drizzle the melted chocolate over top of the cookies.

These little bites are amazing when they're still warm and gooey; and they're really good when they've cooled off too....I pop mine back in the microwave for 10-15 seconds just to goo them back up a bit!  Enjoy!
